Healthy Oven Roasted Tomatoes


As someone who is fairly health conscious I'm always looking for ways to incorporate flavour without piling on the pounds. So, recently I came across this recipe on the BBC Good Food website.

At only 76cal per portion I decided to give it a go! The parcels were tricky to make at first as there aren't any instructions as to how to go about it. I found the easiest way is to just simply scrunch up the sides of the baking paper until stable.

They came out of the oven smelling of garlic sweetness and zingy balsamic vinegar. But most importantly they tasted outstanding! Personally, I chose to serve mine alongside cajun coated cod and sautéed garlic mushrooms. I would definitely recommend you give them a go!
