IT'S PANCAKE DAY!!!
Pancakes. Everyone has their own way of doing it and normally I'd stick with my grandma's recipe for the traditional crepe. However, I'm a student now and money can often be tight so that's when I set about coming up with a recipe that was as economical as possible without losing any of the flavour!
After quite a bit of testing (and eating!), I think I've cracked it! These pancakes are light, fluffy and full of chocolate - what more do you want?! They also have a lovely sweet background flavour of banana which really brings an element of luxury to what is actually a really cheap dish. So if you're a student, like me, or you want to save a few pennies this Pancake Day, you have to give these a go!
Chocolate Chip Banana Pancakes
Makes 6-8
2 large eggs
2 medium bananas, mashed
pinch of baking powder
chocolate chips
butter

Chocolate Chip Banana Pancakes
Makes 6-8
2 large eggs
2 medium bananas, mashed

Mix together the eggs, banana and baking powder in a bowl until well combined. Heat a frying pan over a medium heat and add, once hot, a generous knob of butter.
Pour a ladleful of the pancake batter into your pan and spread it into a circle with the back of the ladle. Let it cook until almost done on the bottom (be patient!), then sprinkle over a small handful of the chocolate chips.
Flip it over when the edges are dry and the bottom is golden. It'll be a little messy and the chocolate will melt. Cook for just over a minute on the other side then transfer to a plate. Repeat with the rest of the batter.

Serve on their own or with a dollop of whipped cream or scoop of ice cream or both!
