Bread Made Easy

I'm a firm believer that processed food is definitely not a good thing. Especially when it comes to bread, as it is packed with salt, sugar and all sorts of additives that we're much better off without. This recipe is delicious - the best thing since sliced bread, if you will.

I know it is cheap and easy to just pick up a loaf from your local supermarket but I can assure you that making your own bread can be cheap and easy too, and it's certainly more rewarding. This recipe can be adapted into family sized loaves or smaller rolls that can be frozen until needed. There is no need for a fancy bread maker or even a loaf tin.

Homemade 50/50 Bread
Makes 1 family loaf or 8 medium rolls

250g wholemeal bread flour
250g white bread flour
1 x 7g sachet dried yeast
2 tbsp honey
2 tbsp sunflower oil
Pinch of salt
300ml tepid water

Place all the ingredients into a food processor using the dough tool. Mix on a low setting until it forms one piece of dough. Remove the dough and knead by hand for 5 minutes.

Place in a large bowl and cover with cling film and leave somewhere warm for 1 hour. Turn the oven onto 180C/gas 4.

One hour later the dough will have doubled in size. To knock the dough back I lift out of the bowl and throw it onto the work surface a few times.

At this stage any additional flavourings can be added such as seeds, nuts, herbs, chopped olives etc. I have experimented with many variations but I definitely think less is more and would recommend either plain or just a few seeds on top.

Form into a loaf shape or divide into 8 equal balls and flatten into bread rolls, score the top with a knife.

Place on a non-stick baking tray dusted with flour, cover with a tea towel and place in a warm place for 30mins.

Bake in the oven for 18 – 20 mins, checking at 17 minutes. The bread is done when you tap the bottom and it sounds hollow.

Allow to cool before cutting, although I find it hard to resist buttering a warm roll to check that it's okay!
