Scrumptious Seasonal Soup


I often get donations from my friends and family who have allotments, and at this time of year there are a few leaks that need using up. Great in pies, great in risotto, great in spaghetti bolognese, but even better in a healthy hearty soup!




But this isn't just any soup... This is my mum's leek and potato soup and it's a knock out! Creamy in texture, rich in flavour and definitely one to warm you up and make you feel cosy on the inside!

My Mum's Leek and Potato Soup

1 large red onion, chopped
3 bay leaves
1 litre of vegetable stock
2 large potatoes, peeled and diced
2 leeks, thoroughly washed and sliced
Salt and pepper
250ml semi-skimmed milk
Place the onion in a large saucepan with the bay leaves and stock. Bring to the boil, cover and simmer for 5 minutes.

Add potatoes and leeks to the pan. Season well with the salt and pepper. Bring back to the boil, cover and simmer for 30 minutes or until your potatoes are soft.

Take out the bay leaves and add the milk. Heat through gently (not bringing to the boil). 

Blend using a hand blender or food processor. Taste and adjust seasoning if necessary.

Serve with a homemade bread roll
