From the Butcher's: Juicy Juicy Pork Chops

It's meat box o'clock and this time it's all about the chops. The humble pork chop may seem a bit boring but it's super cheap and, if paired with the right herbs and spices, it can be transformed into something spectacular!

What's more this recipe involves removing all the fat from the outer edge of the meat and the pork itself is really lean, making this a really healthy way to get protein into your life which helps you get closer to that bikini body without piling on any fat!

Full of flavour and totally juicy, you simply have to give these a go. It's just a case of marinating the meat before sticking it on the grill, no fuss and done in no time at all. Ideal for a quick, tasty, healthy lunch or served with a few sides for a yummy supper!

Juicy Juicy Pork Chops
Serves 2- 4 depending how many sides you serve with it

4 free range pork chops, all the outer fat removed (easy to do with scissors)
2 tbsp olive oil
2 tsp thyme (fresh is possible, but dried works just fine)
2 cloves of garlic, crushed
1-2 tsp cayenne pepper, to taste
juice and zest of half a lemon
Put the chops in a large bowl and add all the other ingredients.

Mix well then cover and leave to marinate in the fridge for 30 minutes. If you don't have time you can do without the marinating time but the longer you can leave it the tastier it will be!

Heat a large non-stick frying pan, or I like to use a grill. Lift the pork out of the marinade and shake off any excess. Cook for around 3-4 minutes on each side until the meat is cooked through.

Remove from the pan and leave to rest, pouring any cooking juices on top. Ideally leave to rest for 3 minutes, covering the meat in foil.

Serve with potato wedges and a mixed salad, or alternatively with mashed potato and veg such as cauliflower or broccoli.
