Grilled Chicken with Sautéed Sweet Potatoes

At the minute, I'm trying my best to be on a bit of the health kick before summer gets under way, although this has proved difficult during exams because of, you know, chocolate...

So last night, determined to be healthy, I rustled up a tasty little chicken number that kept me full up for the rest of the night and tasted pretty top notch too! What's more, it was pretty inexpensive and I'm confident that anyone could pull it off in their kitchen at home. 

Lean meats such as chicken give you a great protein boost without adding fat and sweet potatoes are awesome for preventing blood pressure from rising as well as containing less calories than regular potatoes. 

Tasty food that's good for you, what more can you ask for?!

Grilled Chicken with Sautéed Sweet Potatoes
recipe is per person

1 skinless chicken breast, scored on both sides
olive oil
1 tsp oregano
1-2 tsp cayenne pepper, to taste
1 sweet potatoes, chopped into 2cm cubes
1 tsp rosemary
1 garlic clove, crushed
salt
pepper

On a plate mix together the oregano and cayenne pepper. Then coat the chicken, first with a teaspoon of oil then with the spice mix, ensuring the meat is evenly and fully covered and the spices rubbed into the scores. Put to one side to marinate.

Place a frying pan on a gentle heat and add half a tablespoon of oil. Add the garlic and rosemary and fry without browning until the aromas are released.

Add the potatoes to the pan and turn the heat to medium/high, frying until golden on all sides. Remove from the pan and place on kitchen towel to absorb any excess oil.

Either in the same pan or in a grilling machine, cook the chicken for around  5 minutes on each side or 5-7 minutes in total on a grilling machine. The juices should run clear when a knife is inserted.

Serve with a fresh salad or some stir fried veg.
