Gorgeous Garlic Chicken Stir Fry

Looking for something simple, super healthy and cheap as chips for dinner? Look no further! At only 262 calories per serving, this tasty chicken stir fry is super good for you (especially if you're on the 5:2 diet) without compromising on flavour! Made up of things most people have knocking around in their cupboards plus a few fresh ingredients this recipe won't break the bank either.

Truly delicious and deep in flavour you're bound to love this dish and you can knock it up in around half an hour (depending on your chopping speed!). This is the perfect supper for a night lazing around in front of the tv or if you're in a rush to get ready for a night on the town!

Garlic Chicken Stir Fry
Serves 4

  • 2 teaspoons sesame oil
  • 4 chicken breasts, cut into chunks
  • 1 mug chicken stock (not filled to the rim!)
  • garlic cloves, minced
  • 1 1/2 tablespoons cornflour
  • 1/4 teaspoon chilli flakes
  • 1/4 teaspoon salt
  • pepper (whatever colour you prefer), cut into thin strips
  • 1 whole broccoli, split into florets
  • handful of mushrooms, sliced (optional)
  • 2 tablespoons soy sauce

  • Place a large nonstick frying pan or wok over medium-high heat until hot. Add 1 teaspoon of the sesame oil to pan, and tilt to coat evenly. Add chicken, and stir-fry 5 minutes or until it is no longer pink in center. Remove and set aside.
  • Combine the chicken stock and next 4 ingredients in a small bowl or simply in the mug (to save on washing up!). Stir until cornsflour dissolves. Set aside.
  • Add remaining 1 teaspoon oil to pan; add pepper strips and broccoli; stir-fry 1 minute. Add mushrooms (if using), and stir-fry 30 seconds. Increase heat to high. Stir stock mixture, and add to pan with soy sauce, chicken, and any accumulated juices. Bring to a boil; cook 1 to 2 minutes or until slightly thickened.
  • Serve with rice or noodles (NB: this is not included in the calorie count)
