Super Simple Chocolate Cupcakes (Vegan)

Every now and then I come across a recipe that's so good I simply have to share it... This recipe from instagram legend and super caterer Milli Taylor makes just three cupcakes, perfect for when you don't want a massive batch.

The recipe can be adapted to be vegan, as you will see, and it mainly uses ingredients that most people will have lying around. The measurements are in tablespoons and teaspoons so this is also a great recipe for kids to try. You can of course scale the recipe up if you want to make more!

Super Simple Chocolate Cupcakes (Vegan)
Makes 3

5 tbsp plain flour
5 tbsp sugar
2 tbsp cocoa powder
1 tsp baking powder
3 tbsp warm coffee (or hot water)
2 tbsp milk (soy/nut milk for vegans)
1/2 tsp vanilla (optional)
2 tbsp coconut oil, melted (or veg oil or butter)
pinch of salt

To decorate:
30g chocolate
1/2 tsp coconut oil, melted (or veg oil or butter)
sprinkles/crushed nuts/

Preheat the oven to 180C/160C fan.

Sift dry ingredients together in a small bowl. Add the wet ingredients and use a whisk or a fork to combine. Spoon the mixture into three cupcake cases. Bake in the preheated oven for 18-20 minutes and then take out and cool on a rack.

To decorate, melt the chocolate and oil/butter in a microwave on high in 30 second batches, stirring between. It should only take 1 minute in microwave. Alternatively, melt the chocolate and oil in a heatproof bowl over a pan of simmering water.

Once melted, pour the melted chocolate on top of the cupcakes and scatter over sprinkles or crushed nuts, if you like.
