Quesadillas (Vegetarian)

Inspired by a Jamie Oliver recipe, these simple quesadillas are not only good for you but they're super easy, really quick and very low cost - perfect for any day of the week!

I used red onion, a red pepper and a carrot because that's what I had in my fridge but this recipe is brilliant for using up literally whatever veg you have lying around. You can also jazz this up with fresh or dried chilli or herbs if you have them. Feel free to double or triple this recipe to feed a family...

Quesadillas (Vegetarian)
Serves 2

1 onion/leek, finely chopped
1 pepper, finely chopped
1 carrot, grated
40g hard cheese (cheddar, Parmesan etc.)
2 large flour tortillas

Put all the veg in a bowl together with the cheese and mix it all together. To assemble, scatter the veg and cheese mixture across one tortilla, then top with the remaining tortilla.

Put a large non-stick frying pan on a medium heat. Dry fry the quesadilla for 5 minutes, or until golden and crisp on the outside, and the cheese has melted in the middle, turning halfway.

Let the quesadilla cool for at least a minute before slicing into wedges and serving. I recommend a nice fresh salad on the side.
