2 Ingredient Flatbreads (No Yeast!)

Unlike most bread recipes, these gorgeous flatbreads are quick, easy (I'd go as far to say foolproof!), cheap and, most importantly, delicious.

You only need two ingredients to make them, you can have them on the table in a matter of minutes (although a little resting will help if you have the time) and they go with pretty much anything. I used mine a wrap for chicken kebabs, smeared first with butter and then homemade hummus, but go wild! They're even great on their own as a snack.

If you don't have self-raising flour, you can use plain or chickpea or gluten free flour instead - just mix with 2 tsp baking powder before you add the yoghurt.

2 Ingredient Flatbreads (No Yeast!)
Makes 6

150g self-raising flour, plus a little extra
150g yoghurt

Optional extras:
pinch of salt
nigella seeds
cumin seeds
butter

Put the flour and yoghurt (and salt/nigella seeds/cumin seeds, if using) in a mixing bowl and stir with a spoon to combine. Dust a surface with a little extra flour, turn out the dough and knead until a smooth soft dough forms, adding a little more flour if the dough is too sticky.

Wrap in cling film and leave on the bench to rest for half an hour (you can skip this step if rushed for time). Divide the dough into 6 balls and roll each out to about 4mm thin.

Place a dry non-stick frying pan over medium heat. Add the flatbreads, one at a time, and cook, turning after 1-2 minutes when they bubble and darken on the underside. Cook for a further minute on the other side and set aside while you cook the remaining flatbreads.

If you like, you can spread each flatbread with a little butter for extra deliciousness!
