Happy Hour: Piña Colada
There's something about a Piña Colada that just makes people smile. Sweet, creamy and very boozy - they're perfect to get any party started!
I used fresh pineapple as I happened to have some in the fridge but I've also included an alternative using pineapple juice from a carton. You can of course make this with less rum if you want to make it weaker or leave it out altogether for a virgin version.
Happy Hour: Piña Colada
Serves 2
½ fresh pineapple or 400ml pineapple juice
200ml coconut milk or coconut cream
150ml white rum
handful ice cubes
Blitz the pineapple in a blender (if using). Add the rest of the ingredients to the blender and blitz until smooth and creamy.
If you like, you can garnish with a wedge of fresh pineapple, a cocktail cherry and a sprig of mint.
