Tomato, Bean, Pepper and Nduja Traybake

'Nduja is a spicy spreadable sausage from Calabria in southern Italy. You can find it in delis and some larger supermarkets and it's worth seeking out if you can. However, if you can't find it, you should be able to find an 'nduja pesto, which works just as well, or if you want to make this veggie, use a red pepper pesto instead.

Whilst this is great on it's own (and even better with hunks of bread and butter for dipping and scooping up), you can make it go further by serving with a grilled piece of fish or chicken or even some garlic prawns.

Tomato, Bean, Pepper and Nduja Traybake
Serves 2 as a main, 4 as a side

450g tomatoes, roughly chopped
2 tbsp olive or rapeseed oil
175g roasted peppers from a jar, drained and roughly chopped
2 x 400g tins butter beans, drained and rinsed
150g marinated artichoke hearts, drained
30g 'nduja
2 tbsp fresh basil, finely chopped
sea salt and freshly ground black pepper

Preheat the oven to 210C/Gas 8. Arrange the tomatoes in a large roasting tray, drizzle with the oil and sprinkle with plenty of salt and pepper. Toss to coat then cook in the hot oven for 15 minutes.

While the tomatoes cook, mix the peppers with the beans and artichokes. Remove the tomato tray from the oven then tumble in the pepper mixture. Give everything a good mix then top with little dots of 'nduja.

Reduce the oven temperature to 200C/Gas 7, and then return the tray to the oven for another 10 minutes. When everything is warm and the 'nduja has melted into the mixture, scatter with the basil and serve.
