Cajun Steak Tacos
You just can't beat a good taco, especially when it's packed with perfectly cooked and seasoned steak, charred peppers, ripe avocado and a combo of creamy garlic and basil yoghurt and spicy hot sauce. Heaven!
Ready in a flash and certain crowd-pleasers, these are the perfect healthy meal. As always, you can make changes to suit you preference, swap the steak for chicken, prawns or halloumi and use coriander or parsley in place of the basil. Whatever you do, just make them!
Cajun Steak Tacos
Serves 4
Serves 4
oil
2 sirloin steaks
2 tbsp Cajun seasoning
4 mixed peppers, cut into slices
200g low-fat Greek yoghurt
2 garlic cloves, grated or crushed
large handful fresh basil leaves, finely chopped
4 flour tortillas
1 avocado, sliced
hot sauce, to serve
sea salt and freshly ground black pepper
Place a frying pan over a high heat while you rub the steaks with a little oil and season with the Cajun spice mix. Add to the hot pan and fry for 2 minutes on each side until charred. Remove from the pan, wrap in tin foil and leave to rest.
Turn the pan down then add a little more oil together with the sliced peppers a good pinch of salt and pepper. Fry for a few minutes until soft.
Meanwhile, mix the yoghurt, garlic and basil together with a good pinch of salt and pepper.
Warm the tortillas in a dry frying pan (or give them 30 seconds or so in the microwave). Slice the steaks into strips. Arrange all of the elements on top of your tortilla, drizzle with a little hot sauce (if you like) then wrap and enjoy!
