Proper Tasty Peanut Butter Protein Pancakes

Pancakes are one of those foods that just cry out to be eaten on weekends when you want a little treat and something a bit more exciting that a boring slice of toast!

This recipe provides all of the glorious flavour without any of the guilt as it is both dairy- and gluten-free! It is packed full of healthy protein and it even gives you a couple of your 5-a-day. This is the perfect breakfast if you're on a mission to achieve that summer bod or even if you're trying to get kids eating better. Peanut butter, bananas and berries - what more could you ask for to start your day?!

Proper Tasty Peanut Butter Protein Pancakes
Serves 1

2 eggs
1 banana, preferably extremely ripe, mashed
1 tbsp peanut butter
2 tbsp ground almonds
½ tsp baking powder
½ tsp vanilla extract (optional)
2 tsp coconut oil (or any other cooking oil)
To serve:
Handful of berries

Crack the eggs into a mixing bowl and lightly beat them with a fork or whisk. Add the mashed banana, peanut butter, ground almonds and baking powder and, if you're using it, the vanilla extract. Beat together until you have a lumpy batter.

Heat half of the oil in a large non-stick frying pan over a medium heat. Once it's hot, add half of the pancake mix to the pan. Cook until it has puffed up slightly and small bubbles appear on the surface. Flip using a spatula and cook on the other side for 2 minutes, until golden on both sides. Repeat with the rest of the batter and the remaining oil.

Serve scattered with berries and a dollop of yoghurt if you fancy!
