Best Ever Beef Burger

This week marks the final push for exam season and if I'm honest all the days are just starting to blur into one. So... last night, when it dawned on me that it was Saturday, I decided that it was high time for what I call "weekend food" - think burgers, pizza, steak, chips - and so this burger recipe was born.

This is actually really simple to knock up but the flavour punch is unreal. Juicy burgers, warm toasted brioche, sweet caramelised onions and a couple of little hits from the mustard and vinegar - to die for! Not only do I think these burgers tasted fantastic, they got a double thumbs up from my little brother - winner!

Best Ever Beef Burger
Serves 2

For the burgers:
375g minced beef
2 cloves of garlic, very finely chopped
1 heaped tsp mustard
sea salt and freshly ground black pepper
For the caramelised onions:
1 tbsp rapeseed oil
1 red onion, sliced
1 tbsp sherry vinegar
To serve:
2 brioche buns
2 handfuls of shredded lettuce
mustard (optional)
chips

To make the burgers simply mix all the ingredients together, being sure to be generous with the salt and pepper. It's best to start with a spoon until the mustard is well distributed but then dive in and use your hands. Form the mixture into two fat patties, drizzle with a little oil on both sides, rub it all over and set aside.

Heat the onions with the oil in a small frying pan over a low heat with a good pinch of salt. Let them cook down for 15-20 minutes, stirring every now and then. Once they are sticky and glossy, add the sherry vinegar, stir and then take off the heat.

Meanwhile, cook the burgers in frying pan or griddle pan over a medium-high heat for 4-6 minutes on each side. Remove from the pan and allow them to rest for 2 minutes. Place the brioche buns, cut side down into the pan to warm through and soak up all the left over goodies.

To serve, place a handful of lettuce onto the base of each brioche bun, top with the burger followed by half the caramelised onions each - I also like a good dollop of mustard on the top of the bun for an extra flavour kick! Then finish with a portion of chips each and enjoy!
