Utterly Slutty Brownies

Today my blog reaches its first birthday and I can think of no better way to celebrate such an occasion than with the naughtiest brownies known to mankind. They begin with a layer of cookie dough, followed by a layer of Oreos and they are topped with a layer of the gooey-est brownie ever before being sprinkled with more Oreos. Total indulgence.

In terms of the wow-factor these naughty little numbers are a sight for sore eyes. They are the ultimate baked good and they have been known to make grown men cry out in joy. Bake my slutty brownies to celebrate any occasion with family or friends or simply make them to enjoy with a big mug of tea.

Utterly Slutty Brownies
Makes 12

285g butter
4 eggs
130g brown sugar
335g plain flour
1tsp baking powder
130g dark choc chips
2 packs of Oreos
335g caster sugar
110g cocoa powder
130g whit choc chips
salt

Preheat the oven to 180C and line a tin measuring approximately 20cm/8in squared with greaseproof paper and butter or tin foil.

To prepare blondie/cookie dough layer: Melt 8 tbsp of the butter either in a microwave or a pan. Beat the melted butter with the brown sugar, using an electric mixer, until smooth. Add 2 eggs and continue beating. In a separate bowl, combine 180g plain flour, 1/2 tsp baking powder, and a good pinch of salt. Add to the butter mixture and beat just until combined, without over-mixing. Stir in the dark chocolate chips.

To prepare brownie layer: Mix the caster sugar, cocoa powder and the remaining baking powder in a medium bowl. Melt the rest of the butter and add it to the mixture of dry ingredients, whisking to combine. Add a tbsp of boiling water and stir to combine and thicken the mixture. Add the remaining vanilla and eggs, beating using electric mixer to blend ingredients together. Add the remaining plain flour and a good pinch of salt and stir until just combined without over-mixing. Stir in white chocolate chips.

To assemble: Layer the blondie cookie dough on the bottom of the baking pan. Layer a single layer of oreos on top of the blondie cookie dough. Pour the brownie batter over the oreo layer. Break the rest of the oreos into smaller pieces and sprinkle them over the top of the brownie layer.

Bake for 35 minutes or until set on top in the middle. You want to underbake these slutty brownies rather than overbake them. Cool on rack before cutting into slices.
