Banging Beef and Chorizo Burgers

The key to a great burger is simplicity and this particular version has exactly that. The burger itself is is simply one part chorizo to three parts minced beef along with a dash of seasoning and in terms of garnish I just add a really quick tomato relish, some lettuce and sprinkling of goats' cheese. The result is pleasure in its purest form.

I could talk about this burger all day but if I had to narrow it down to three words I'd have to go for juicy, well-balanced and super-delicious. This heavenly handheld meal is perfect Friday food, it's great for sharing with your mates and it's even a novel yet brilliant thing to make for a date! Nothing says "I love you" like a good burger.

Banging Beef and Chorizo Burgers
Makes 2

For the burgers:
75 g chorizo, super finely chopped 
250 g minced beef 
1 tsp paprika 
a few pinches of sea salt 
1 tbsp olive oil
For the relish:
1 tomato, finely sliced 
1 onion, finely sliced 
pinch of paprika 
1 tbsp olive oil 
For the topping:
large handful of lettuce or rocket
soft goats' cheese (as much as you want!)
2 burger buns, halved

For the burgers: Put the chorizo, minced beef and paprika in a bowl and use your hands to combine. Form 2 patties and season with a few pinches of salt. Set to one side.

For the relish: Sauté the tomato and onion together in a frying pan with the paprika and olive oil for about 15 minutes. Set aside. 

Drizzle the olive oil over the burger patties and use you hands to rub them all over so they are covered in the oil. Cook the patties in a hot frying pan over high heat - if you like burgers medium-rare, it will take 3-4 minutes on each side. For well done it will take 6-7 minutes. 

Heat the grill to medium-high and toast the buns for 2 minutes. Alternatively just pop them in the toaster. Spread the cut side of the bun crowns with a small amount of relish. On the bun base, spread come of the remaining relish, the lettuce or rocket, then the patties and the goats' cheese. Top with the other half of the burger bun and serve. I like mine with chips!
