Incredibly Interesting Indian Green Pea Soup

Sometimes food can totally alter your mood and this vibrant soup is one of those dishes. If you're a bit fed up, of the weather, or of work, or of pretty much anything, then this soup is guaranteed to brighten up your day. Not only is it packed with the fresh flavour of green peas, it also provides your tastebuds with a little kick of spice and a zing of fresh lime and ginger.

This is one of those recipes that requires just one pot and almost no effort at all. It will be made in just over half an hour and is the ideal lunch or starter. What's more, it is unbelievably low cost making it ideal for those on a budget, and it is packed full of vitamins and nutrients as well as being low calorie and low fat.

Incredibly Interesting Indian Green Pea Soup
Serves 4-6

1 large onion, peeled and chopped
2 garlic cloves, peeled and crushed
110g potatoes, peeled and cubed
2cm piece fresh ginger, peeled and finely chopped
2 tsp ground cumin
1.5 litres hot vegetable stock
1 chilli, deseeded (optional) and finely chopped
1/2 level tsp crushed coriander seeds
275g frozen peas
salt and pepper
juices 1/2 lime
150g fat free yoghurt
paprika, for garnish

2-3 limes, halved

Place the onion, garlic, potato, ginger cumin and half of the stock in a large heavy-based saucepan. Bring to the boil, cover and let simmer for 10 minutes.

Add the chopped chilli and coriander seeds to the saucepan, together with the remaining stock and the peas. Bring to the boil and then reduce the heat to a simmer for 10-15 minutes uncovered. Check the vegetables are tender and then season well with salt and pepper.

Add the lime juice and whizz in a blender or with a handheld blender, return to the pan and stir in the yoghurt, reserving a tablespoon of it for garnish. Heat through over a very low heat without letting it boil. Serve hot sprinkled with paprika and a swirl of yoghurt. I like to eat mine with an extra wedge of lime and a mini naan bread.
