My Ultimate Chicken Burgers

Much healthier than minced beef and a great base for adding all sorts of flavours, chicken is a super tasty alternative to beef in your burgers. Chicken breasts are notoriously expensive but this recipe allows 4 breasts to easily feed 8 people. 

These delicious burgers are packed with flavour and can be pimped to suit your tastebuds. I like mine with a good kick of cayenne pepper and a smokey back note of paprika, but the world is your oyster! Why not whack in a load of fresh thyme and some caramelised onions or how about the zest of a lemon and a good squidge of honey? Whatever takes your fancy, you simply have to give these a go at home!

My Ultimate Chicken Burgers


Makes 8 patties

4 chicken breasts
3 garlic cloves, crushed
1-2 tsp cayenne pepper (to taste)
2 tsp smoked paprika
big handful of chopped fresh chives
2 eggs
salt
oil (I recommend rapeseed but olive is as good)
To Serve:
bread buns
lettuce
tomato, sliced
cheese, grated
condiments of your choice

In a food processor, blitz together the chicken, garlic, cayenne, paprika, chives, eggs and a good pinch of salt until combined. Tip the mixture onto cling film, wrap up and chill in the fridge for an hour.

When you're ready to cook, heat a large frying or griddle pan to a medium heat and add 1 tbsp of oil. Divide the chicken mixture into eight balls. Place the balls into the pan, it is best to do this in batches dependant on the size of you frying pan. Gently press each ball to form a patty and then completely leave alone to sear for 4 minutes.

Flip the burgers over and cook on the other side for a further 5 minutes. Take off the heat, cover with foil and allow to rest for a few minutes.

I recommend serving them with sweet potato wedges and a dollop of good quality mayonnaise!
