Heavenly Homemade Pizzas!

I'm a huge believer in the idea that 'homemade is best' and that is especially true when it comes to foods that are traditionally bad for you and are heavily processed. A great example of this is pizza...

Everyone loves pizza since you can have pretty much anything you want on top of it and what's more it's a lot easier to make your own dough than you'd imagine. It's much healthier than those you buy in the supermarket and kids love getting involved. They're also great for casual dinner parties because everyone loves having control over their dinner!

Heavenly Homemade Pizza Dough
Makes 6-8 medium-sized pizzas

1kg '00' flour or 880g strong white bread flour and 200g semolina flour
1 tsp fine sea salt
15g dried yeast
1 tbsp golden caster sugar
4 tbsp olive oil
650ml lukewarm water

Sieve the flour(s) and salt onto a clean work surface and make a large well in the middle.

In a jug, mix together the yeast, sugar, oil and water. Pour into the well bit by bit and slowly mix the wet into the dry using a fork initially and then with clean, flour-dusted hands.

Knead for a good 10 minutes until you have a smooth, springy dough. Then place it in a flour-dusted bowl and cover with a damp cloth. Leave to double in size for around an hour.

Take out the dough and knock it about a bit. I personally enjoy punching it and throwing it hard onto the surface but do whatever takes your fancy!

Divide the dough into as many balls as you wish and either use immediately or wrap in cling film and put them in the fridge or freezer.

Roll the bases out then place on well-oiled baking trays/pizza stones, add whatever toppings you want - I recommend tomato passata as a base - and then cook in the oven at as hot a temperature as possible. Watch like a hawk as they take no time at all to cook - around 3-5 minutes depending on thickness.



TIP: These can even be cooked on a bbq! (works best with barbecues with lids so the pizza is being cooked on all side)
