Happy Hour: Grass is Greener

Pike's Ibiza is cited as one of the most famous or infamous hotels on the island, developing a notorious reputation for hedonism in the 1980s, and associated with being a playground for the rich and famous. It is best known for being the location of filming for Wham!'s 1983 hit "Club Tropicana" and for Freddie Mercury's 41st birthday bash in 1987, supposedly one of the most lavish parties ever to be held on Ibiza.

It's also famous for it's cocktails and this is one of the best... As you know I like to make my own limoncello (it's super easy) and I highly recommend you make your own too! As for the rest of the ingredients, you may already have them in your drinks cupboard but, if not, it's worth stocking up so you can make this again and again!

Happy Hour: Grass is Greener
Makes 1

30ml gin

15ml dessert wine

10ml elderflower liqueur

5ml limoncello

20ml lime juice

10ml vanilla syrup (or sugar syrup)

6 basil leaves

ice

Muddle (bash!) the basil leaves in a cocktail shaker then add all of the other ingredients. Add a small handful of cubed ice then shake hard.

Strain into a chilled coup or martini glass and enjoy straight away!
