There's something truly palate-pleasing about the
combination of garlic, chilli and lemon juice and when they're combined with
good quality olive oil and fresh kale (currently in season), you have yourself
a beautiful side dish that I'm sure you'll make again and again.
Warm Kale Salad with Garlic, Chilli and Lemon
olive oil
2 red chillies, sliced
3 garlic cloves, finely sliced
50g pine nuts
1 lemon, juic only
800g kale, tough stalks removed and roughly chopped
sea salt and freshly ground black pepper
Heat 3 tbsp olive oil in a small saucepan pan over a medium-low heat. Add the chilli, garlic and pine nuts and cook gently until the nuts have a little colour.
Meanwhile, bring a pan of salted water to the boil. Add the kale and cook for 3-4 minutes till tender. Drain well then put in a large frying pan over a medium heat.
Add the lemon juice to the oil and then immediately pour the mixture over the kale. Stir fry for a few minutes until everything is mixed together, season with salt and pepper and then serve.
