Slow-Roasted Tomatoes with Garlic, Basil and Balsamic

This is so easy to make it can barely be described as a recipe but it's also so delicious that I simply had to share it with you...

The flavours of Italy combine wonderfully here to create a side dish to die for. I like this served simply with pan-fried chicken or grilled fish but it also works as a gorgeous sauce for pasta either as it is or blitzed until smooth. However you serve it, I can guarantee you'll love it!

Slow-Roasted Tomatoes with Garlic, Basil and Balsamic
Serves 4-6 as a side


1kg plum tomatoes, halved 
6 garlic cloves, peeled and whole 
1 red onion, cut into wedges
1 tbsp olive oil 
1 tbsp balsamic vinegar 
2 tsp dried oregano
large handful fresh basil, roughly chopped
sea salt and freshly ground black pepper

Preheat the oven to 200C/390F.

Put the tomatoes skin side down in a large baking tray. Add the garlic cloves and onion wedges then drizzle over the olive oil and balsamic vinegar. Scatter over the oregano and basil and season liberally with salt and pepper.

Roast in the preheated oven for 45 minutes until softened and starting to char around the edges. Serve immediately with simple pan-fried chicken or fish and rice or pasta.
