Cracking Carrot, Tahini and Pistachio Salad
As with all of my salad 'recipes', this dish is more of an assembly job than anything else but I simply had to share it with you because it is SO delicious! With flavours from the Middle East, this vibrant salad is great as a light lunch or even better as a side dish to grilled meat or fish. I actually tend to serve it alongside a couple of other salads at BBQs so crack yours out this afternoon and enjoy!
Cracking Carrot, Tahini and Pistachio Salad
Serves 4
500g carrots, peeled and thinly sliced diagonally
1 large red onion, peeled, halved and very thinly sliced
100g pistachio nuts, lightly toasted in a dry pan
20g fresh mint, finely chopped
For the dressing:
2 tbsp tahini
4 tbsp olive oil
finely grated zest and juice of 1 lemon
Put the carrots, red onion, pistachios and mint in a bowl and mix well. Put all the dressing ingredients in a small bowl and whisk until well-combined. Season generously with salt and pepper. Pour the dressing over the salad, tossing it through to coat the vegetables well. Serve immediately.
