Gluten-Free Cauliflower Rice

Health food definitely seems to be en vogue at the minute and while I'm not going to bore you with a load of facts and figures, it won't do you any harm to avoid white carbs every once in while! But just because there's no carbs, it doesn't mean there has to be no flavour and this healthy alternative to rice is actually way tastier and quicker to make than the real thing! So get one of your five-a-day without even trying and enjoy the tastiest cauliflower you've ever eaten!

Cauliflower Rice 
Serves 4 as a side 

1 cauliflower 
1 tsp oil (I use coconut but any is fine) 
2 tbsp water 
Salt and pepper 

Remove the outer leaves from the cauliflower and the tough end of the stalk. Break the rest into pieces and put into a food processor. Pulse until the cauliflower has been broken into rice-sized pieces. 

Put the oil into a pan with the cauliflower, water and a good amount of salt and pepper. Stir until mixed then cook over a medium heat with the lid on for 4-6 minutes until tender. Check every few minutes to make sure that there's enough liquid to stop it from burning. Serve just as you would with rice.

TIP: This recipe works just as well with broccoli.
