Bangin' Broccoli 'Slaw

I'm hopefully not going to jinx it but it seems like the weather is finally changing... Spring is well and truly on its way and brighter weather calls for brighter food!

This is no ordinary coleslaw. For starters, the main ingredients is broccoli and instead of salad cream or yoghurt or regular mayonnaise to coat it, this uses a homemade ginger and sesame mayo that will truly knock your socks off! A true flavour explosion and ideal as a side dish with any simply prepared meat or fish, this healthy alternative not only tastes great but will do you good too! Easy to make and full of goodness, this is a must-try recipe.

Bangin' Broccoli 'Slaw 
Serves 4-6, as a side 

1 broccoli 
1/2 red onion, finely sliced 
1 tbsp cider vinegar 
2 tbsp goji berries 
2 tbsp almonds, roughly chopped 
For the mayonnaise: 
1 egg yolk 
50ml sesame oil (not toasted) 
150ml rapeseed or olive oil 
20g fresh ginger, grated 
1 tbsp poppy seeds 
Salt and pepper 

Break the florets off the broccoli and slice the stalk. Place in a food processor and pulse until roughly shredded. Transfer to a bowl and rinse out your processor as you'll need it again! 

In one small bowl, soak the red onion slices in the vinegar and in another bowl, soak the goji berries in a little warm water for 20 minutes. 

To make the mayonnaise, put the egg yolk, vinegar, honey and ginger into the food processor. Turn it on full speed and then slowly add each of the oils in a steady stream until fully incorporated. Turn off the motor and stir in the poppy seeds and some seasoning. 

To serve, mix the broccoli in a large bowl with the red onion slices, drained goji berries, almonds and mayonnaise.
