Beautiful Beef Stir Fry

I love a good stir fry. They're so quick and easy and, if done right, delicious! Plus they're a great way to pile a load of veg into your meal without you really noticing. This particular stir fry is one of my favourites because flash fried beef is one of god's gifts to humans. 

I have a new found love for soba noodles so I tend to put them in everything at the minute but feel free to use whatever noodles you like. The key to any stir fry, of course, is preparation so once you've done a bit of chopping (or you've let the supermarket do the chopping for you!) the meal can be cooked in minutes! This works really well as a lunch or dinner and it's perfect for Spring with its fresh, light flavours and subtle kick of chilli, garlic and ginger.

Beautiful Beef Stir Fry
Serves 4

oil, for frying
400g beef fillet, trimmed and cut into thin strips
1 garlic clove, grated
2cm knob ginger, grated
1 red chilli, finely chopped
2 tbsp light soy sauce
1 tbsp rice wine vinegar
1 tsp honey
1 tsp cornflour
1 tsp sesame oil
300g soba noodles, cooked according to packet instructions
To serve:

Put all the ingredients, except the noodles, into a medium-sized bowl and mix. Leave to marinate for a minimum of 15 minutes (while you prepare the veg dish) or a maximum of overnight.

Heat a wok or a large frying pan over a high heat. Add a little oil, swirling the pan to coat the surface evenly. Add half the beef strips and stir fry for about a minute until just browned. Remove from the pan onto a plate and repeat with the other half of the beef. Set the beef aside.

Add the noodles to the pan along with the remaining marinade. Stir fry until all the noodles are coated in the sauce. Add the beef back to the pan, toss through the noodles and serve immediately along with the stir fried veg.
