Mediterranean Traybake with Sausage, Gnocchi and Veg

As Autumn rolls in, the traybake is well and truly back in our house... This slightly unusual number uses gnocchi and chipolatas together with seasonal vegetables and Mediterranean flavourings for a truly comforting meal.

As you can see, I used red onion, courgettes and cherry tomatoes as they're just coming to the end of their season in the UK but this is a really versatile dish and you can use pretty much any vegetable you like.

Mediterranean Traybake with Sausage, Gnocchi and Veg
Serves 4

1 large red onion, cut into wedges
2 courgettes, cut into chunks
400g cherry tomatoes on the vine
12 chicken chipolatas (or your favourite sausage)
2 tbsp olive oil
400g fresh potato gnocchi
A small handful of freshly chopped basil
1 lemon, zest grated and juiced
Sea salt and freshly ground black pepper

Heat the oven to 190°C/170°C fan/gas 5.

Toss the onion, courgette, cherry tomatoes and chipolatas with most of the olive oil and a good amount of salt and pepper, then roast for 15 minutes.

Mix the gnocchi with the remaining drizzle of olive oil, then add to the tray. Return to the oven for 5 minutes or until the sausages are cooked through.

Heat the grill to medium-high and put the tray under the grill for 3-4 minutes until everything is golden and crisp. Scatter over the basil and the lemon zest, then squeeze over the juice of the lemon to serve.
