Mexican Pork with Roast Sweet Potato

This is another light, easy dish perfect for cooking midweek - it's low effort, low cost, low calorie.

Pork seems to have gone out of fashion lately but, honestly, you can't beat a grilled pork steak, especially when you add in Mexican flavourings, roast sweet potatoes and a zesty chilli and lime yoghurt sauce.

Mexican Pork with Roast Sweet Potato

oil
2 medium sweet potatoes, peeled and diced
1 tsp dried oregano
150g natural yoghurt
1 tsp chilli sauce
Finely grated zest of 1 lime
1 tsp cumin seeds
½ tsp paprika
½ tsp mild chilli powder
2 garlic cloves, crushed
1 tbsp honey
2 boneless pork loin steaks

Preheat the oven to 180°C/fan160°C/gas 4. Toss the sweet potatoes with a drizzle of oil, salt, pepper and the oregano. Put in a roasting tin and cook for 30 minutes.

While they’re cooking, mix the yogurt with the chilli sauce and lime zest.

Preheat the grill to medium. Mix the cumin, paprika, chilli powder, garlic, honey and oil together in a large bowl. Add the pork and turn to coat. Place the pork steaks, spaced apart, on a foil-lined baking tray and grill for about 6 minutes, turning halfway, until cooked but still juicy.

Serve the grilled pork steaks with the roast sweet potatoes and the yoghurt on the side. Add a mixed salad, if you like.
