Brie and Mango Chutney Bites (Vegetarian)

I was kindly gifted some goodies from the New Yorkshire Emporium and have been experimenting with them all weekend. This is the first of a mini-series using the chutneys, rubs and hot sauces - a delicious canapé perfect for Easter entertaining!

For me, the best nibbles are eaten all in one go, packed with flavour and incredibly moreish. These are exactly that and, what's more, they're easy to make and require very few ingredients. I used Brie but. if you wanted to, you could use a different soft cheese.

Brie and Mango Chutney Bites
Makes approx. 40

200g pack filo pastry
200g Brie cheese, finely chopped
100g mango chutney (I used New Yorkshire Emporium)
40g melted butter

Cut filo pastry into 1 inch squares. Mix the Brie and mango chutney in a bowl. Preheat the oven to 190C/Gas 5.

For each parcel, take 3 squares of filo and arrange on top of each other at an angle to form a star. Place ½ tsp of the cheese and mango chutney mix in the centre of the star. Draw the edges of the filo up to form a parcel. Brush with melted butter. Repeat until you run out of the Brie mixture.

Bake in the preheated oven for 6 minutes, until crisp and golden.
