Grilled Lamb with Avocado and Goat's Cheese
I can't take the credit for this recipe as it's actually my other half's creation... perfectly grilled lamb steaks, a creamy yet fresh avocado and goat's cheese dip served with roast tomatoes and a big handful of salad - delicious!
This is a great midweek meal as there are few ingredients, it's really easy to make and you can get it on the table in under half an hour. High in healthy fats but extremely low in carbs, this is a great dish if you're wanting to cut down but still feel full.
Grilled Lamb with Avocado and Goat's Cheese
While the lamb is resting, place the avocado flesh, goat's cheese, yoghurt and olive oil into a food processor and blitz until smooth. Remove to a bowl and stir in the chives along with a little salt and pepper.
Serve the steaks with a big dollop of the avocado dip, cherry tomatoes and a big handful of salad.

Grilled Lamb with Avocado and Goat's Cheese
2 lamb steaks
10 cherry tomatoes
1 large or two small avocados
70g soft goat's cheese
60g Greek yoghurt
2 tbsp. olive oil
small bunch chives, finely chopped
salad, to serve
sea salt and freshly ground black pepper
Turn your grill to maximum and lay the lamb steaks on a lined baking sheet. Season with salt and pepper and then cook under the grill for 6 minutes. Flip the steaks over, scatter the cherry tomatoes on the same tray and cook for a further 4-5 minutes. Shut the grill door, turn off the heat and leave the lamb to rest.
Serve the steaks with a big dollop of the avocado dip, cherry tomatoes and a big handful of salad.
