Spiced Turkey and Apple Burgers
It's that time of year where turkey features on almost every menu but with a bit of imagination you can spruce this festive meat up and produce an exciting dish to be enjoyed all year round...
There's nothing worse than dry turkey but with apple running through this burger, the meat stays totally juicy. In terms of flavour, there's paprika, oregano and garlic - a delicious combination. I like to serve these in a bun with caramelised onions and sweet potato wedges on the side.
Spiced Turkey and Apple Burgers
Serves 2-4
oil
250g turkey mince
1 green apple, peeled and grated
2 tsp oregano
1 tsp paprika
1 beaten egg
1 garlic clove, finely chopped
1 slice toast, finely chopped
100g cheddar, grated
sea salt and freshly ground black pepper
Mix the turkey, apple, oregano, paprika, egg, garlic and chopped toast in a large bowl with a good pinch of salt and pepper. Shape into four burgers and then chill in the fridge for 10-15 minutes to firm up slightly.
Heat a large frying pan over a medium-high heat with a drizzle of oil. Cook the burgers for 5 minutes on each side. Don't be tempted to move the burgers at all except for the one flip so that a crust can form on the outside.
When the burgers have had 5 minutes on each side, place a quarter of the cheese on top of each sprinkle 2 tbsp of water around the base of the pan and then top with a lid or an up-turned plate. Take the pan off the heat and let the cheese melt and the meat rest for 3-4 minutes. Serve with sweet potato wedges and salad, if you like.
