Sausage, Tomato and Balsamic Traybake

This dish is an absolute winner. A handful of ingredients, a little bit of chopping and then into the oven and onto a plate in just 30 minutes...


Sausages are profoundly underrated: yes, we all love them as part of a fry-up or in a sandwich but if you get good quality ones, they should certainly be used as part of a main meal too. This dish, whilst only using a few ingredients, has lots of flavour big-hitters - garlic, red onions, balsamic and basil - which all roast and cook together to create a dish you will make again and again!


Sausage, Tomato and Balsamic Traybake
Serves 2

6 sausages
3 garlic cloves, sliced
2 small red onions, cut into wedges
A little olive oil
300g cherry tomatoes, halved
2 tbsp balsamic vinegar
A handful torn fresh basil leaves
Sea salt and freshly ground black pepper

Preheat the oven to 200C.

In a large roasting tin, toss together the sausages, garlic and red onions with a little olive oil. Roast in the preheated oven for 15 minutes, until golden.

Add the cherry tomatoes and balsamic vinegar. Season and toss together gently. Return to the oven for a further 15 minutes, stir in a handful torn fresh basil leaves and serve.
