No-Churn Lemon Curd and Passion Fruit Ice-Cream
As you can no doubt tell from the length of the recipe, this is a doddle to make. It's a lifesaver when you have guests coming as it takes a matter of seconds to make and you can get it done well ahead of time.
Lemon curd and passion fruit make a great combination as they both dance between sour and sweet in the most delicious way. The addition of meringue not only helps to hold the ice-cream together but also provides sweetness to counteract the sour notes of the fruits and crunch for a contrast in texture. This stuff is heavenly and I am of the firm belief that you should always have some in the freezer!
No-Churn Lemon Curd and Passion Fruit Ice-Cream
In a large mixing bowl, whip the cream to soft peaks.
Spoon into a 1.5-litre tub, freeze overnight and then serve.

No-Churn Lemon Curd and Passion Fruit Ice-Cream
300ml double cream
250g lemon curd (you can make your own!)
Pulp from 3 passion fruits
In a large mixing bowl, whip the cream to soft peaks.
Fold in the lemon curd, add the meringues and stir in the pulp from the passion fruits.
Spoon into a 1.5-litre tub, freeze overnight and then serve.
