Chorizo and Cabbage Hash

I can hardly call this a recipe as it essentially involves throwing a load of tasty things in a pan, usually whatever you have lying around in the fridge, and giving it a good stir fry before serving with a fried egg on top... but doesn't that sound delicious!?

This is a bit of a staple in my house of a weekend morning and it's especially good when you have a couple of leftover cooked potatoes from the night before to add a bit of stodgy, crispy goodness to the dish. Ultimately you can add whatever you like to the dish but I find it's always good to start with onion and garlic and finish with an egg.

Chorizo and Cabbage Hash
Serves 4

oil
1 onion, diced
2 garlic cloves, finely chopped
4 rashers bacon, roughly chopped
100g chorizo, peeled and roughly chopped
handful leftover potatoes, cut into chunks
large handful shredded cabbage

To serve:
4 eggs, fried to your liking

Heat a couple of tbsp of oil in a large frying pan over a medium heat. Add the onion and gently fry for 5 minutes. Add the garlic to the pan and stir fry for a further minute. Add the bacon and chorizo, turn up the heat and then continue to stir until the bacon has started to crisped up. 

Add the potatoes to the pan, adding a little bit more oil if needed, frying for 5 minutes until starting to brown. Finally throw in the cabbage and give everything a good stir until it's thoroughly mixed together. Season liberally with salt and pepper and divide between four plates, topping each with a fried egg.
