Luscious Lemon, Garlic and Sage Chicken Spiedini
The sun seems to be performing its final outing of the summer this week so why not make the most of it and dust down that barbeque for one last hoorah.
These Italian-style kebabs are easy, quick, tasty and low cost with only five ingredients (one of which being olive oil!). The punchy flavour of lemon, garlic and sage perfectly complement the succulent chicken breasts and the result is a light yet satisfying main course. I like to serve mine with a handful of fresh salad and a few homemade wedges.
Luscious Lemon, Garlic and Sage Chicken Spiedini
Serves 4
4 chicken breasts, cut into 1-inch cubes
50ml extra-virgin olive oil
3 garlic cloves, chopped
Handful sage leaves
3 lemons, cut into small wedges
Place the chicken in a shallow dish and cover with the olive oil and garlic. Season, then leave to sit in the fridge for at least an hour.
You should have enough for around 8-10 skewers. Start by threading a pice of chicken on to a skewer, followed by a sage leaf and a lemon wedge and repeat until you have used up all the ingredients. Place on a hot BBQ or alternatively put them in a griddle pan over a medium-high heat for 10-15 minutes, until the chicken is cooked through. Serve warm or cold with a mixed salad.
TIP: As I said, these are great for BBQ-ing if the weather holds out but they taste just as good cooked in a griddle pan on the stove top.
