Happy Hour: Fantastic Flat Peach Smash

Flat peaches are bang in season right now and I've noticed them popping up in supermarkets more and more. This cocktail was invented by a bar tender named Rich Hunt, who is one of the most innovative cocktail-makers in the UK. With just the right balance of sweet flat peach, sour lemon, punchy lemongrass and dry gin, this cocktail has become a favourite in my house and I'm sure it will in yours too.

Flat Peach Smash
Makes 1

1 tbsp acacia honey
1 lemongrass 
½ lemon, cut into quarters
1 flat peach, chopped into small chunks
50ml gin
Handful of crushed ice
sprig of mint

Put the honey into a mug and fill it up to half way with boiling water. Stir and leave to infuse.

Remove the outer layer of the lemon grass and wrap it around a straw, trimming off any excess straw.

Chop the remaining lemongrass very finely.

Put the lemon, lemongrass and two tablespoons of the honey and water mixture into a tumbler or mason jar. With a muddler or the end of a rolling pin, squash the ingredients together. Add the peach and continue to smash.

Add the gin and pick off the leaves from the mint and add those too. Top up the glass with the crushed ice and mix together with a spoon.


TIP: To make this for kids, simply swap the gin for apple juice.
