Patatas A Lo Pobre ("Poor Man's Potatoes")

Some of the best recipes around the world come from the most basic of ingredients. This delicious side dish comes from Spain and is made up of simply an onion, four potatoes, a green pepper, vinegar and olive oil. What's more, it takes no time at all to prepare before you leave it to work it's magic for twenty minutes on the hob. The result is a comforting mixture of crispy potatoes and soft sweet peppers that goes brilliantly with almost any meat or fish dish.

Sometimes the best things in life don't cost the earth, are simple and require little to no effort and this dish is one of those things. I recommend cooking this dish with a glass of Rioja in hand and good music playing in the background.

Patatas A Lo Pobre
Serves 4

1 large Spanish onion, thinly sliced
4 medium potatoes such as maris piper 
  or king edwards, peeled and cut into 1 cm slices
1 large green pepper, seeded and thinly sliced
2 tbsp sherry vinegar
200ml olive oil
salt and freshly ground black pepper

Mix together the onion, potatoes and pepper and season with the salt, pepper and vinegar.

Heat the olive oil in a large frying pan over a medium heat and add the onion, potato and pepper mixture. Cook for about 20 minutes, turning occasionally. The vegetables should be soft, but not too crispy.

TIP: This can just as easily be baked in the oven at 180C, but you will still need to turn the mixture occasionally.
