Pappa Al Pomodoro (Italian Tomato and Bread Soup)

As a student, I try and save money wherever I can and this hearty but healthy soup ticks all the right boxes. At less than £1 a portion it can compete with supermarket soups but it tastes like it came from heaven. 

Hailing from Tuscany, this soup is incredibly silky and bursts with the flavours of Italy that we all know and love. It's perfect for lunch as it is not only comforting but also very filling so it will easily see you through until dinner time.

What's more, at only 224 calories a portion you simply can't afford not to make this!

Pappa Al Pomodoro (Italian Tomato and Bread Soup)
Serves 2

2 cloves of garlic
1 tbsp olive oil
4 sprigs of fresh basil, leaves picked off 
and stalks finely chopped
1 tsp chilli flakes
2 x 400g tinned chopped tomatoes
2 slices stale or lightly toasted bread
salt and pepper

Peel and finely slice the garlic and put into a medium pan on a medium heat with the olive oil, the finely chopped basil stalks and the chilli flakes.

When lightly golden, add the basil leaves, the chopped tomatoes and 1 tin's worth of water. Bring to the boil and simmer for 5 minutes, then tear in the bread.

Simmer for 10 minutes, season to taste and serve right away. (I simply ate mine out of the pan!)
