Killer Chocolate Celebration Cake!

I've written about my amazing grandma on this blog before (see My Grandma's Famous Spicy Sausage) and this cake is another great family tradition. My grandma has baked this chocolate cake ever since I can remember and, depending on the occasion and the age of the children in attendance, it is either covered in classy maltesers or, for the younger generation, a couple of bags worth of haribos!

The cake itself is incredibly simple to make, it can even be made in a microwave! The centre is filled with hazelnut chocolate spread and the icing can be whipped up in minutes. This moist chocolate cake, enhanced with even more chocolatey flavour, along with an elegant malteser decoration, provides a cake worthy of any occasion!

Killer Chocolate Celebration Cake!

8oz light olive oil or margarine
8oz sugar
6oz self raising flour
4 eggs
2oz cocoa powder
1 tsp baking powder
400g jar of hazelnut chocolate spread (eg Nutella)
240g maltesers/2 big bags of haribos
For the icing:
2oz butter
4oz good quality dark chocolate
6oz icing sugar
milk

Preheat your oven to 180C and line two deep 8-inch cake tins with baking paper and grease thoroughly with butter. Alternatively, butter an 8-inch microwave safe plastic cake mould and place a circle of baking paper in the base.

In a large bowl, whisk together the oil/margarine and the sugar. Then add the eggs, one by one, whisking well between the additions. 

Gradually fold in the flour, followed by the cocoa powder and finally the baking powder. Be careful not to over mix, you want the flour, cocoa powder and baking powder to be just incorporated.

EITHER pour the cake mixture into the two cake tins and bake in the oven for 25 minutes OR pour the cake mixture into the microwave safe plastic mould and put in the microwave on 750 watt for 8 minutes.

While the cake is baking, prepare the icing. Place the butter and chocolate in a microwave safe bowl and then melt in the microwave in 20 second bursts until smooth and silky. Then pour in the icing sugar and beat together until smooth. Add milk if needed to make the icing spreadable.

When the cakes are baked, transfer to a wire rack to cool. Once completely cooled, spread one of the cakes with the hazelnut chocolate spread and place the other cake on top to form a sandwich. If you've made the cake in the microwave, you will need to split your cake in half to do this.

Cover the sandwich with the icing and stick the maltesers/haribos to the outside in any pattern you like! Serve cold with a cup of tea or hot with a dollop of my velvety vanilla ice cream!
