Valentine's Day Special: Chocolate Chip Cookies
What says I love you better than chocolate? Yep, that's right: chocolate AND cookies. These ridiculously simple cookies taste heaven-sent and whether you're treating a loved one or yourself, there's sure to be happy faces all round.
It's Valentine's Day tomorrow and for me that means the perfect excuse to do a spot of baking! These cookies are everything you've ever dreamed of and more: crunchy edges, gooey, chewy centres, meltingly delicious chocolate, just sweet enough and a little bit surprising with the addition of a pinch of salt. Make all your wishes come true this Valentine's with these bundles of joy!
Valentine's Day Special: Chocolate Chip Cookies
Makes 24
275g butter, at room temperature
275g soft light brown sugar
275g caster sugar
2 large eggs
1 tbsp vanilla extract
475g plain flour
2 tsp baking powder
300g milk chocolate, cut into chunks
Put the butter and sugars into a large mixing bowl then beat together with an electric hand whisk until smooth and light in colour - this will take around 10 minutes.
Break in the eggs one at a time, beating between each addition. Stir in the vanilla extract. Sift in the flour and baking powder and mix in with a wooden spoon or, like me, use your hands! Add the chocolate chunks and mix well.
Divide the mixture in half and form into wide sausages. Wrap in cling film and put in the fridge for 30 minutes. Alternatively, freeze them at this point and take them out when you want to bake them, allowing to defrost before cooking.
Preheat the oven to 180C and line two baking sheets with grease proof paper. Slice each cookie sausage into 12 pieces and roll each into a ball. Place six onto each tray, leaving a good amount of space between them as they will spread out. Bake for 15-20 minutes until golden around the edges and pale in the centre. Leave to cool on a wire rack and then repeat with the rest of the dough.
