Sensational Sumac-Spiced Chargrilled Lettuce

So I know what you're thinking - Lettuce is boring, right? Wrong. Yes, it can be a bit bland and is usually just filler in a salad but it can be so much more than that! If you're going to eat it, why not make it the star of the show?

This recipe gives lettuce a bit of a makeover. It's seasoned really well so you get the true exciting flavour of lettuce that you never knew you were missing in life and then it's grilled so it's warm but still crisp and it has a hint of that charred, barbecue-esque flavour that everybody loves. But that's not all... I like to sprinkle my charred lettuce with sumac, a middle eastern spice that's tangy, almost lemony and will change your life forever. This is lettuce on steroids: make it and you won't look at lettuce the same again.

Sensational Sumac-Spiced Chargrilled Lettuce 
Serves 4 as a side 

2 gem lettuces, cut in half lengthways
Olive or rapeseed oil 
2 tsp sumac 
Sea salt and pepper 

Heat a griddle pan over a high heat. Drizzle the lettuce halves with oil and rub all over. Season liberally on both sides with the salt and pepper then grill cut side down for 3 minutes, turn over and cook for a further 2 minutes on the other side. Take off the heat, sprinkle over the sumac and serve.
