Oat Biscuits

You can't beat a good biscuit, can you? These are great for when the craving hits as I usually have all the ingredients in the cupboards ready to go.

As there's no eggs in this recipe, you can make it vegan by using margarine instead of butter and non-dairy milk. You can also experiment by adding a touch of dried ginger or cinnamon, chocolate chips or even chopped nuts to the dough. My only real advice is that you may need to double the recipe as these tend to disappear in minutes!

Oat Biscuits
Makes 12

75g flour
1 tsp baking powder
75g porridge oats
50g sugar
75g butter
1 tbsp golden syrup
2 tbsp milk

Heat the oven to 180C/fan 160C/gas 4. Line a baking tray with baking parchment.

Sift flour into a bowl. Mix in baking powder, porridge oats and sugar. Melt the butter, syrup and milk in a small saucepan or in the microwave and stir. Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.

Spoon onto a baking tray and shape into rounds before flattening slightly with a rolling pin. Leave space between each biscuit as they will spread a little whilst cooking.

Bake in the preheated oven for 10 to 15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.
