No Yeast Pizza Dough

Want to make pizza but don't have the time or patience to wait for the dough to prove? Can't get hold of any yeast? Don't worry! I've got your back! This recipe uses baking powder and the quicker you get it in the oven, the better it is.

When it comes to toppings, the world is truly your oyster. I'm one of *those* people who like pineapple on pizza but I also tried out goat's cheese, caramelised onions, olives and chilli flakes, as well as sun-dried tomatoes, mozzarella and prosciutto ham. I would just say that you need to make sure your sauce goes almost to the edges and make sure you season the pizzas when they come out with fresh basil, a drizzle of oil and salt and pepper.

No Yeast Pizza Dough
Makes 4 small pizzas

350g flour (I used 00 flour but you could use plain)
3 tsp baking powder
1 tsp salt
1 tbsp oil

Heat your oven as high as it will go. Place a baking tray upside down on the middle shelf. Remove any shelves above it so you have plenty of room. Allow the oven to heat up for at least 30 minutes.

Mix together the flour, baking powder and salt in a small bowl, add the oil and 170ml water then bring together with your hand until it forms a ball, making sure you pick up all of the flour from around the bowl.

If stiff, add a drop more water, but note that it should be soft and not sticky. Knead on a floured surface for 3-4 mins. Roll into 4 balls, then flatten out on a sheet of baking paper using a rolling pin (or a bottle of wine!).

Add your toppings (sauce first) and bake each one on the upside down baking tray for 7-8 mins. Transfer to a rack to cool slightly whilst you bake the rest.
