Miso Tuna with Sticky Green Beans

The fresh, light and healthy meals continue in my house after the madness of Christmas and this one is a cracker!

I love seared tuna, especially with Asian flavours, and this recipe could not be simpler. Rich miso, zingy ginger and salty soy sauce form the basis of the sauce which is left to get add sticky and caramelised coating all of the veg. Super easy, super tasty - you have to give this one a go!

Miso Tuna with Sticky Green Beans
Serves 2

oil
thumb sized piece of ginger, grated
1 tbsp miso paste
1 tbsp soy sauce
2 tuna fillets
2 tbsp sesame seeds
200g green beans, trimmed and halved
150g mushrooms, sliced

Heat a little oil in a large frying pan over a medium-high heat. Add the ginger and miso to the pan with a splash of water and stir fry for a couple of minutes until combined. Pour in the soy sauce, stir to combine and add another splash of water so you have a sauce consistency. Add the green beans and mushrooms to the pan and cover (with a lid or tin foil). Turn the heat to low and leave to cook for a few minutes.

Whilst the veg is cooking, heat a small frying pan over a high heat and add a little oil. Coat the tuna in half of the sesame seeds. When the pan is smoking hot, add the tuna and cook for 1 minute on each side. Remove from the pan and set aside.

Take the lid off the veg and turn the heat back up to medium. Stir fry until the sauce is reduced and sticky. To serve, divide the veg between two plates, cut the tuna into thick slices and place on top with the remaining sesame seeds sprinkled over.
