Spiced Meatball Flatbread

Often an end-of-week fridge raid leads to some kind of stir fry or curry but sometimes inspiration hits and a thing of beauty is created...

This is a riff on the 'naan bread pizza' as invented by my brother circa 2010 but in my version I've pimped it up with meatballs, crispy kale and hot sauce. The result? A flavour-packed, tastebud-tingling, super-delicious flavour sensation that is guaranteed to cure any hangover! I served mine with some salted cucumber but feel free to add chips and veg to make this go a little further and serve two people.

Some helpful swaps you can make: sausage meat or falafel for the mince; cabbage or spinach or tenderstem broccoli for the kale; and any flatbread for the naan.


Spiced Meatball Flatbread
Serves 1 hungry person

oil
200g lean pork mince
100g kale, roughly chopped
pinch chilli flakes
1 garlic naan
hot sauce (optional)
50g cheddar cheese, grated

Preheat the grill to high. Roll the pork mince into eight even balls. Put a large frying pan over a high heat with a drizzle of oil. Cook the meatballs in the frying pan, moving as little as possible, until seared on all sides. Set aside.

Add the kale to the pan together with the chilli flakes. Stir fry for a few seconds until starting to wilt. Place the naan on a lined baking tray, top with the kale, meatballs, a drizzle of hot sauce (if using) and then cover with the grated cheese.

Grill the flatbread for around five minutes until the cheese is melted and bubbling then serve hot with a fresh cucumber salad.
