Healthy Pork Carnitas

This take on the Tex-Mex classic - Carnitas (Mexican pulled pork) - is the definition of a one pot wonder. Using the slow cooker and a handful of ingredients, you find yourself with the most tender, most juicy, most delicious pork you've ever eaten. As it tradition, I have served mine in a wrap with the classic trio of accompaniments but it would work just as well in a sandwich or with rice.

Healthy Pork Carnitas
Serves 6-8

1kg pork loin
2 onions, sliced
4 cloves garlic, chopped
1 chilli, chopped
2 tsp salt
170ml orange juice
2 tsp cumin seeds
2 tsp oregano
½ tsp black pepper

To serve:
wholemeal tortilla wraps
2 avocados, mashed with lime juice
tomato salsa
sour cream

Season the pork with the salt, cumin, oregano and pepper and place into the slow cooker. Throw the onions, garlic and chilli pepper on top. Pour the orange juice over everything. Cook on low for 8 hours or on high for 5 hours.

Once cooked, remove the pork from the slow cooker, shred it with two forks and set aside. Skim any fat off the juice left in the slow cooker and discard. Add the pork back to the slow cooker with the juices and mix through. To serve load wholemeal wraps with mashed avocado, tomato salsa, the pork and sour cream.
