Perfect Pea and Ham Soup with Gorgonzola Dolce
Pea and ham is my all time favourite soup. For me, you simply cannot beat the freshness and vibrancy of peas paired with salty, meaty chunks of good quality ham littered throughout, like little mouthfuls of joy. This version is particular decadent as its thickened with a little gorgonzola cheese, which really gives it its creamy texture and a good kick of savoury tang.
This is a great dinner party dish as not only can it be prepared in advance and not only is it delicious but it also looks pretty spectacular with the bright green flecked with pink. Even if you're not entertaining, the recipe is so simple I like to just make a big batch and whack a load in the freezer to save for those days where I need a pick-me-up for lunch!
Pea and Ham Soup with Gorgonzola Dolce
Serves 4-6
1 litre chicken or vegetable stock
750g frozen peas
80g gorgonzola dolce, broken into chunks
large handful shredded ham hock
Heat the stock in a pan, add the peas, bring up to the boil and then simmer for 5 minutes. Season with freshly ground black pepper, then stir in the gorgonzola. Leave to cool, then whizz to a smooth soup with a stick blender. Stir through the ham hock and adjust the seasoning to taste. Serve with a chunk of crusty bread.
