Happy Hour: Passion Fruit Fizz
It's been a little while since a cocktail recipe was featured on the blog but I have to say that this little number certainly deserves its place... A glass of pure sunshine guaranteed to light up any evening, you definitely have to give this one a go!
Passion fruit is one of my absolute favourite flavours and I noticed that they had begun to stock them in my local supermarket so I set about creating a recipe for them and so this cocktail was born... It's perfect for parties as you can easily double or even triple up the quantities, it's ridiculously easy to make and the syrup can be made up to a few days ahead to take the stress out of the party itself.
Happy Hour: Passion Fruit Fizz
Serves 4
5 ripe passion fruit
30g golden caster sugar, plus extra for sprinkling
good squeeze of lemon juice
75ml vodka
bottle of cava/sparkling wine
Halve the passion fruit, scoop out the pulp and push through a sieve. Reserve the pips to one side. You should end up with 90ml juice. Pour the juice into a pan, add the sugar and heat gently until the sugar has dissolved, then bring to the boil and simmer for a couple of minutes until the liquid is reduced to a syrup. Add the lemon juice and cool completely, then strain.
Preheat the grill to its hottest setting. Refill 4 of the passion fruit halves with the leftover pips until full to the top. Sprinkle liberally with the sugar until the top is covered. Make a little basket out of tinfoil so that the passion fruit halves will sit inside it without rolling around. Grill until the sugar has completely melted and it's starting to bubble and darken. Leave to cool completely.
Divide the syrup equally among 4 champagne glasses and add a splash of vodka to each glass. Top up with chilled cava or sparkling wine and serve with the brûléed passion fruits.
