Fantastic Flu-Buster Soup

Let's be honest, January can be a pretty rubbish month... It's cold, you're a tad chubbier from the festive period, you have to go back to work/school/uni and everyone seems to have a case of the sniffles if not a full-blown cold. Well don't be glum - I have the answer! This all-singing, all-dancing, immune-booster soup!

Yes, soup can be incredibly boring, particularly when you need a can opener to make it, but it can also be delicious and exciting. Don't believe me? Wait til you give this one a go! It really is a one pot wonder and it is guaranteed to fight away cold and flu symptoms. The secret ingredient is goji berries, which, if you haven't heard of them, are BRILLIANT and can now be found easily and cheaply in any supermarket. I like to make a big batch of this so I always have some on-hand in the freezer for whenever I'm feeling a little under the weather. 

It doesn't matter who I make this for, it always gets a great reaction and it will make you happy from the inside out!

Fantastic Flu-Buster Soup
Serves 8-10

2 tbsp olive oil
2 red onions, finely chopped
2 green chillis, finely chopped
8 garlic cloves, finely chopped
10cm piece of fresh ginger, grated or finely chopped
4 medium sweet potatoes, skins left on and diced
250g chestnut mushrooms, sliced
125g oyster mushrooms, torn into chunks
125g shitake mushrooms, sliced
4 handfuls of goji berries, plus extra for serving
vegetable stock, to cover
salt and pepper

Put the onion, chilli, garlic and ginger in a large saucepan along with the olive oil. Cook over a medium-high heat for about 5 minutes until the onion softens. Add the sweet potatoes and mushrooms to the pan together with the goji berries. Stir well, then add enough vegetable stock to cover all the ingredients. Simmer well for 10-15 minutes, until the potato is soft. Season thoroughly with salt and pepper.

Using a stick blender or a food processor, blitz the soup until smooth. Serve hot with a few extra goji berries scattered over the top.
